Grilled Zucchini Pasta Salad

We had an unexpectedly warm couple of days here in New England that felt like a taste of summer to come! So naturally, I had to whip a little something up to take advantage of the first outdoor meal of the season.

This grilled zucchini pasta salad recipe is just what you need for your next cookout. Not only is it quick and easy to prepare, but it doesn’t have any mayonnaise, making it a healthier alternative to traditional pasta salads.

To make this delicious orzo pasta salad, you’ll need some cooked orzo pasta, ripe plum tomatoes, fresh zucchini, garlic, lemon juice, olive oil, fresh basil, dried oregano, salt, and pepper.

First, preheat your grill to medium-high heat. While the grill is heating up, slice the tomatoes and zucchini in half lengthwise, and grill them for about six minutes until they are lightly charred and tender. Set them aside to cool.

Next, in a large mixing bowl, whisk together the chopped garlic, lemon juice, olive oil, fresh basil, and dried oregano until well combined. Season the dressing to your taste with salt and pepper.

Once the grilled vegetables have cooled down, roughly chop them into bite-sized pieces and add them to the bowl with the dressing. Then, add the cooked orzo pasta and mix everything together until the vegetables and pasta are evenly coated with the dressing.

Grilled Vegetable Pasta Salad

Yield: 6 servings

This is the best light pasta salad recipe. Perfect for summer, and no mayonnaise! Try this orzo pasta salad for your next cookout.

Ingredients

  • 2 cups of cooked orzo pasta
  • 3 medium plum tomatoes
  • 3 medium zucchini
  • 3 garlic cloves, finely chopped
  • Juice from 1 lemon
  • 1/3 cup olive oil
  • 1/2 cup chopped fresh basil
  • 1/2 tablespoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat
  2. Slice tomatoes and zucchini in half lengthwise, then grill for 6 minutes
  3. Meanwhile, combine the garlic, lemon juice, olive oil, basil, and oregano in a large bowl
  4. Season dressing to taste with salt and pepper
  5. Roughly chop the grilled vegetables and add them to the bowl
  6. Add cooked orzo and mix
  7. Enjoy cold, at room temperature, or slightly warm
