This Lemon Oregano Chicken marinade is the perfect recipe for adding some zest to your weeknight dinners. The combination of fresh lemon juice, minced garlic, grated Parmesan, dried oregano, and a touch of olive oil creates a flavorful marinade that will take this dinner staple to the next level.
- 1/4 cup lemon juice
- 1 tbsp fresh minced garlic
- 1 tbsp grated Parmesan
- 2 tbsp dried oregano
- Pinch of salt
- Cracked black pepper to taste
- 1 tbsp olive oil, plus more for sautéing
- 6 boneless skinless chicken thighs
- Mix first 7 ingredients in a large bowl
- Add chicken and turn to coat
- Allow to marinate for 20 minutes up to 4 hours
- Coat bottom of a large nonstick pan with olive oil
- Cook chicken over medium-high heat 5-7 minutes per side or until cooked through
Serve with a side of cous cous and cucumbers.
