For best results you'll want to grate your cheese rather than using the pre-grated kind
In a stand mixer, combine the room temp butter and cheese on medium speed
Add the rest of the ingredients and beat on medium-high speed until just combined
Divide dough in half and roll each portion into a log shape
Wrap each dough log in plastic wrap and freeze for 1 hour (or until ready to bake)
Using a sharp knife, slice the partially frozen dough and bake on a sheet pan lined with parchment paper
