Cheeseburger Quesadilla (a Fun Twist on a Classic)

I’ll be honest: I use a lot of the same ingredients over and over and things can get a little boring. I try to shake things up by reimagining the basics and that’s how I came up with this mash-up.

This cheeseburger quesadilla is Taco Tuesday meets Grill Night. With just a few familiar ingredients you can make a done to death classic feel new again.

This quesadilla is crispy, gooey, and oh so satisfying. I actually came up with it as a football snack last Sunday while my husband was watching the 49ers (go Niners!)

The key to making this recipe work is to create a super thin burger patty roughly the same size as the tortillas. I cut a circle of parchment paper using the tortilla as a template to guide my patty formation.

The parchment also helps a ton when it comes time to transfer the beef patty to the skillet. It’s so large and so thin that it needs a support beneath it. If you don’t have parchment you could use a large spatula for the transfer.

I opted to top ours with precooked bacon and sharp cheddar, but you can easily customize your topping with whatever suits your taste. Just be sure not to add wet ingredients like pickles because the result will be a soggy quesadilla. To keep it crispy, I’d recommend adding wet ingredients over the top just before serving.

Toppings and Condiments

Here are some topping ideas:

  • mustard
  • ketchup
  • minced onion
  • chopped pickles
  • turkey bacon
  • pepperoni
  • any type of melting cheese
  • shredded lettuce
  • steak sauce
  • pepperoncini
  • black olives

I like to serve these burger quesadillas with some type of potato side dish. Here I used a basic roasted potato, but you could kick it up a notch with my recipe for roasted potatoes, apples, and onions or truffle tater tots.

Cheeseburger Quesadilla

Yield: 4 servings

This cheeseburger quesadilla is a fun and easy twist on the classic cheeseburger, packed with all the familiar flavors you love. With crispy tortillas, melty cheese, and seasoned ground beef, it's the perfect family-friendly dinner!

Ingredients

  • 1 lb ground beef
  • 4 burrito sized flour tortillas
  • Salt and pepper to taste
  • Cheese (I used shredded cheddar)
  • Precooked bacon (optional)

Instructions

  1. Preheat a nonstick pan over medium-high heat.
  2. Divide the ground beef in half and form each into a very thin patty, roughly the size of a tortilla (I cut parchment into a circle and use that as my guide). Season with salt and pepper to taste.
  3. Transfer patty into the hot pan and cook for 3 minutes.
  4. Flip patty, then top with cheese, bacon (if desired), and a tortilla.
  5. Flip the whole stack so the tortilla is on the bottom. Add more cheese to the top and cover with a second tortilla.
  6. Allow the tortilla to crisp up and the cheese to melt, about 1 minute. Flip to allow the other side to crisp and melt.
  7. Remove cooked quesadilla from pan and set aside. Wipe out the grease, then repeat the process with the second burger patty.
  8. Cut each quesadilla into fourths and top with your favorite burger condiments (two wedges per person).
  9. Enjoy!

Notes

Condiment ideas: Mustard, ketchup, finely minced onion, lettuce, chopped pickles

Season with taco seasoning for a Tex Mex twist.

Use any type of melting cheese you like.

Substitute the ground beef for ground chicken or turkey for a leaner option.
