Easiest No Boil Lasagna Recipe

Sure, you could follow the recipe on the box of your no-boil lasagna noodles but I’ve tried that and it’s not the best. The lasagna is never cooked properly and there’s never enough filling. Here’s my take on the recipe and I promise it’s the easiest no-boil lasagna you’ll ever make!

The key to making a no-boil lasagna work is to use plenty of sauce, which it why you’ll use two whole jars. It might seem like a lot, but it will all be absorbed during the baking process. I HIGHLY recommend using Rao’s pasta sauce. It’s pricey, but so so good.

For the mozzarella, I highly recommend grating it fresh vs. buying a bag of already grated cheese. It just melts so much better! Grating a block of mozzarella can definitely be kind of a pain, but this rotary grater makes it so much easier.

When layering the ingredients, you really just need to eyeball the amount you’re using. Just keep in mind that you’ll end up with four layers of the ricotta mixture so use roughly a fourth of the mixture in each layer, spreading some on each noodle. Precision isn’t really important because it will all bake together beautifully in the end.

You’ll notice there are large gaps between the noodles and think your dish is too large, but you’ll be shocked at how much they expand during baking! They’ll end up fitting perfectly.

You’ll want to bake this in stages. First covered with foil for 45 minutes, then uncovered for 15 minutes. You can call it done at this point or you can pop it under the broiler for another minute or two to brown the top if you prefer.

Easiest No Boil Lasagna

Yield: 8 servings
Prep Time: 15 minutes
Cook Time: 1 hour
Additional Time: 10 minutes
Total Time: 1 hour 25 minutes

This no-boil lasagna is the perfect solution for an easy weeknight dinner. It’s loaded with rich bolognese sauce, creamy ricotta, and plenty of melted mozzarella for a satisfying, family-friendly meal.

Ingredients

  • 2 jars of bolognese sauce (I highly recommend Rao's)
  • 1 box of oven ready lasagna noodles (You'll use 15 sheets)
  • 2 1/2 cups of ricotta
  • 8 oz block of mozzarella, shredded (approx. 4 cups)
  • 1/4 cup grated parmesan
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano or Italian seasoning
  • Cooking spray

Instructions

  1. Preheat oven to 400 degrees F and prepare a 9 x 13 baking dish with cooking spray.
  2. Mix together ricotta, 1/2 cup mozzarella, parmesan, and the seasonings in a medium bowl.
  3. In the baking dish, spread 1 cup of sauce on the bottom, then layer 3 noodles, more sauce, 1/4 of the ricotta mixture, and a light sprinkling of mozzarella. Repeat layers 3 more times for a total of 4 layers of ricotta sandwiched between 5 layers of noodles.
  4. Top with the remaining sauce and mozzarella.
  5. Spray aluminum foil with cooking spray and loosely cover the lasagna.
  6. Bake for 45 minutes covered, then 15 minutes uncovered.
  7. Optional: Broil for a minute or so to brown the cheese if desired.
  8. Allow to set up for 10 minutes before cutting.
  9. Enjoy!

Notes

It looks like a lot of sauce but the key to the no boil noodles cooking is lots of liquid.

Eyeball the amounts for each layer -- precision is unnecessary since it will all bake together in the end.

Use marinara instead of bolognese for a meat-free lasagna.

Serve with a crunchy green side salad, toasted slices of baguette, and my garlic bread butter board.
